Aim of this work was the study of ferulic acid(FA)/cyclodextrin (CD) association complexes for improving its physico-chemical stability. The results obtained showed that CDs can be good complexing agents of FA. FA-alpha-CDs and FA-Hp-gamma-CDs exhibit better characteristics of protection forthis guest molecule. By organoleptic point of view the inclusion with CDs reduces the particular smell of FA.

Abstract
